Sriracha Honey Glazed Swordfish at High Steaks

Chef Nate created this exciting "Fresh Catch" dish utilizing local ingredients that we picked up at the Farmer's Market: Shitake Mushrooms from Dragon Mushrooms and baby Bok Choy from Vang Gardens.  Chef created a wonderful Sriracha Honey glaze to go over the Swordfish - an excellent pairing with the sauteed vegetables.

It's always important to make sure that you wash your market fresh veggies.  Most of the time these are harvested the day before and still contain a lot of sand and dirt that needs to be cleaned off.  The best way to clean baby bok choy is to submerge it in a large sink of water and rinse it until the water is free of dirt.

Here are a few pictures of the Baby Bok Choy and Shitake Mushrooms - Fresh from the Farmer's Market- only the best, local ingredients.

Below is a picture of Chef showing the team how to plate the dish.
