We attended the March of Dimes Celebrity Chef Auction at the Tsakopolous Library Galleria downtown on October 17th 2013. It was a very successful event in which local Chefs and wineries raised over $150,000 for the charity. Each Chef offered up a prize package for the auction - The High Steaks package was: For 8 Guests: Golfing at Whitney Oaks, Dinner at High Steaks, and a Balvenie Scotch tasting. Chef Juan- the assistant Pastry Chef at the Casino and myself, Nikki Rios worked the event together.
This is a Chocolate Peanut Butter Surprise - it was beautiful and delicious. Many guests thought that it was a display dessert until we offered them one.
I made a Braised Kurobuta Pork Belly that was served on a crispy Risotto cake with a Balsamic reduction and Micro Greens. Kurobuta is the Kobe Pig - a Berkshire Hog bred for flavor.
